The Cuts

We select our own cuts to ensure the beef you eat is the best. Organic grass fed beef is very tender and lean and does not have fat around all the connective tissue, the cut is an important feature of our beef.

The Viking cutlet is the king of all steaks. It is thick, lean, tender, succulent and very very rich. If you can eat a whole one yourself you're a greedy guts who loves good steak!

Stir Fry / beef strips

This stir fry or beef strips are super lean and tender. Perfect for the wok, Thai beef salad or a traditional goulash/stroganoff style of dish. Very versatile and easy to use.

Roast Blade / Bolar

A lean and rich knutt of solid beef. Rub with olive oil, season and seal in either a pan on the stove or a super hot oven, then cook for about 45 minutes in a medium oven. Rest for at least 5 minutes before carving. Also great on the BBQ with a lid.

Tbone

Tbone is the best steak for a bbq. The bone keeps in the moisture and structure of the beautiful rich and tender sirloin part of the loin.

Scotch Fillet

Scotch Fillet is a tender and delicate steak and needs to be treated with respect. Bargbeque or grill on a skillet. Can be served as steak ta-tare if you dare!

Osso Bucco

The shank of beef, where the saying "suck the marrow of life" came from. Coat with flour, seal in olive oil then add tomatoes, veges and herbs to simmer away for a melt in the mouth rich dish to serve over mash.

Rump

Rump steak is one of the most versatile cuts, you can simply barbeque it or it makes the best ever beef stroganoff using Bill Grangers recipe.
